Because of the concentrated nature of espresso, it needs roasted coffee to be a more developed in order to be fully balanced. We seek out fuller bodied coffees with flavor notes that lend themselves well to a bit darker roast so they will perform well as single origin espresso (the SO in our Espres-SO stand for Single Origin). Great for folks that love darker roasted coffees.
