ABOUT THIS COFFEE
This coffee is sourced from the Guji Coffee Export PLC, which is owned and operated by Girma Edema who has more than 20 years of experience exporting coffee from the Kercha district in the Oromia region of Ethiopia. Coffee producers deliver their ripe cherries to the Girma’ s coffee washing station where the cherries are sorted an immediately placed on raised beds and dried over a period of 15 to 20 days. The raised drying beds are carefully constructed to ensure proper air circulation and temperature control for an optimal drying process. Cherries are also turned regularly on the beds to prevent damage during the drying process. The cherries are stored in a local warehouse after the moisture is reduced to between 11.5 and 12 percent. Then the beans are transported to Addis Ababa, the capital of Ethiopia, to be milled and bagged prior to export. Girma’s full control of the processing up to the final export stage, results in an exceptionally clean and sweet cup profile.

I have been drinking Modest for over 2 years now and it has been consistently the best coffee I have ever had. You may change the flavors seasonally but it always is a smooth coffee with a fantastic flavor that never upsets my stomach and it fits any time of day. Morning cup, afternoon, or dinner. You have ruined me for any and all other coffee.

Exactly as described; about as dark of a roast as you can get without hitting the second “crack” / or oily bean stage. Flavor notes hold true. The chocolate and carmel notes just as promised. Little to no acidity; Very smooth. Rare to see a natural process coffee roasted this dark but it Modest nailed it.
If you want a 5 star cup for yourself, Make your own 50/50 blend with one of their lighter roasts such as the Bali or Guatamela Antigua = Pure Nirvana of complexity and roasty comfort.

This is my absolute favorite coffee so far. I definitely got the dried cherry notes, but also a caramel/toffee flavor note. The coffee was so smooth and there was a richness to it too without it being overpowering. If I didn’t have so much coffee I would definitely be ordering more. Too much coffee is a good problem to have.

Take this review for what it is – I have the general palate of a tongueless mule. however, i found this coffee to be excellent – we grind it as we brew and we found the nose and bite to be perfect. the coffee was delivered quickly at a very competitive price overall. we’re always happy to support small businesses as we run a couple ourselves. we’re very pleased with this coffee and company.
