ABOUT THIS COFFEE
The Mogiana region, which runs along the São Paulo and Minas Gerais border, is home to some of the most consistently sweet and well-structured naturals produced in Brazil. The region boasts 3500 farmers cultivating a combined area of 202,000ha. We hand select lots from individual farms and process them to create a smooth, clean, highly consistent end product. Our goal with this coffee is to have a consistent profile from lot to lot, and year to year, making our Eagle Mogiana a coffee that you can rely on year-round.

We enjoy dark-roast coffee and we live in South Central Indiana. We have a local roaster who we enjoy but we like to try different small roasters and after reading about the great distributor debacle we decided to check out Modest. VERY pleased with “The Dark”. The beans arrived quickly and they were beautiful and so fragrant. We use a French Press and The Dark did not disappoint. We will definitely be reordered. We also appreciate the flat-rate shipping.

I selected the Uganda – Bugisu coffee because it most closely resembled the roast level of a special edition coffee Modest Coffee created for Awesome Games Done Quick – a speed-running video game marathon for charity. I loved my special AGDQ coffee and I love the Uganda – Bugisu one as well! Typically, I am not a fan of dark roasts because they taste burnt or smoky, but the Uganda – Bugisu is full-flavored and well-balanced. Also, the time it took between ordering the coffee and receiving it was quick, which is always a plus when anticipating a new coffee. I will be ordering more the next time I need a restock of my coffee cabinet.

I was a bit worried about trying this new to me coffee since I don’t usually drink coffee from dark roasted beans. Everything is relative since these beans were about the same color as our previous medium roasted beans. Took sever shot pulls on each of my flat and conical grinders to get the most amount of chocolate flavors. For this coffee I went with the conical grinder to extract a very smooth slightly dark chocolate flavor with minimal if any brightness. Acidity is quite low and the chocolate flavor is wonderfully high. Great for Espresso, Americano, and Cold Coffees.
