When we started Modest Coffee, we did not offer a dark roasted coffee let alone a dark roast coffee subscription. At first, we felt it was important to only highlight the lighter flavors of origin. Also, most dark coffee subscriptions feature over-roasted and exceptionally bitter coffee. Then we decided dark coffee doesn’t have to mean bad coffee. Above all, we feel it’s just as important to pull off a flavorful and well balanced dark coffee as it is for a lighter roast. To do this, we seek out fuller bodied coffees with flavor notes that lend themselves well to a darker roast. So these will taste great no matter how you brew it, whether it’s a pour-over or espresso. This dark roast coffee subscription is great for folks that love rich bold flavors of coffee and is one of our most popular subscriptions.

*We roast our beans to preserve and compliment the flavors of origin. There will always be a bit of variety in our roasts in our continuing attempt to express the best that each bean has to offer. That said, this dark coffee subscription offers our most consistent coffee drinking experience. You can expect familiar roasted coffee flavors with a more traditional roast style.

ABOUT THIS COFFEE

Finca Humana (the Human Farm) is the first thing you will hear about Café Organico Marcala, S.A. (COMSA) if you make your way to visit this cooperative in Marcala, Honduras. The wellbeing of humans is foundational to the COMSA philosophy and educating more than 1,500 producer-members to successfully live in harmony with nature is everywhere at COMSA.
It starts with the La Fortaleza, the COMSA biodynamic demonstration farm where the focus of transferring knowledge takes place through week- long seminars called Pata de Chucho (pawprints left by a stray dog), which aptly reveals COMSA’s dogged exploration for human productivity in harmony with nature.
The trailblazing ideas for using organic matter to productively cultivate high quality coffee is only a sliver of what COMSA teaches about the power of nature through the Finca Humana philosophy. COMSA dedicates significant funding from the proceeds of coffee sales to run a cutting-edge international school dedicated to filling children’s minds with possibility and training them to be the future leaders of Finca Humana.

What makes it so good? The fundamentals: traceability to the Marcala region, which is a protected designation of origin (DENOMINACION DE ORIGEN CAFE DE MARCALA); meticulous post-harvest hand sorting of cherry; cherry floating to remove less dense beans; proper fermentation; long drying times; and a healthy dose of the COMSA philosophy and training.

    Had my first cup of Modest coffee at Society 57 several years ago, and it was love at first sip. The coffee was so distinctly delicious that I knew I had to get my hands on some beans to brew at home! I’ve been having the dark roast auto shipped to my house ever since. Anytime I share this coffee with any of my coffee loving friends, they also notice the superior quality of this coffee right away. It’s a fine way to start your day, to say the least!
