The Modest is our most popular coffee subscription because these coffees are always smooth, accessible and delicious. We think of it as the Goldilocks of coffee; not too light, not too dark. Our focus here at Modest Coffee is to make single-origin coffee more accessible to coffee drinkers everywhere. One of the ways we do that is to offer categories that better reflect the specialty coffee marketplace. We feel this practice gives greater transparency to the entire supply chain and democratizes the buying process. Additionally, we are convinced there is no “wrong way” to do coffee(except flavored coffee, we draw the line there). It doesn’t matter if you like cream and sugar, or drink it black. As long as you enjoy what you are drinking you are doing it right.

*We roast our beans to preserve and compliment the flavors of origin. There will always be a bit of variety in our roasts as we strive to express the best that each bean has to offer.

ABOUT THIS COFFEE

Sourcing Details:

Relatively new to specialty coffee processing in western Honduras, Asociación de Productores de Café Certificados Chiliquera S.A (APROCACERCHIL) has quickly made a reputation that is turning heads.  The success starts with a well defined plan for centralizing the collective efforts of more than 170 member-producers.

Processing Details:

With a centralized wet-mill designed to receive cherries from all of its members, processing consistency is stellar.  The mill floats cherries using recycled water to remove less dense and damaged beans before depulping.  After depulping, coffee is washed with a demucilager, which uses very little water.  Washed parchment is placed on patios to pre-dry and then mechanically dried in horizontal dryers called guardiolas.  Furnaces burn recycled coffee parchment to heat the guardiolas.  Dried parchment is stored and milled in Corquin, which has mild weather conditions ideal for resting parchment and preparing coffee for export.

Exporting Details:

APROCACERCHIL has a fully staffed cupping lab equipped to cup through every lot and ensure consistent quality.  APROCACERCHIL has also worked collectively to establish a number of norms required for certification including organic certification.  APROCACERCHIL goes another step in centralizing efforts with an organic fertilizer production plant that uses coffee pulp as the base ingredient.  An average of 3,000 pounds of organic fertilizer is produced for every hectare of coffee production.  All of this work means producer-members can focus all of their attention on year-round farm management and picking the best cherry possible.
